...work is ranking better than mine? My site www.helixaudiovisual.com is not ranking as high as www.bradleyfraser.com/ or www.explore360.com.
this two site dont seam to be using "normal" or "usual" SEO thechnique.
How can I find what this sites are doing?
what is my site missing?

The ranking is in google for keywords as-

Most likley they are using paid inclusions. They are paying the search engines money to get a better listing.
